Here’s the Navratri Special Malpua Recipe (saatvik style, suitable for Durga Maa prashad):
🍯 Malpua Recipe (Navratri Special)
Ingredients (सामग्री)
For batter (घोल के लिए):
1 cup singhare ka atta (water chestnut flour) / rajgira atta (amaranth flour)
½ cup khoya / mawa (optional for richness)
½ cup mashed banana (gives softness, optional)
1 tbsp desiccated coconut (सूखा नारियल)
1 cup milk (दूध) – adjust as needed
½ tsp cardamom powder (इलायची पाउडर)
For sugar syrup (चाशनी के लिए):
1 cup sugar (चीनी)
½ cup water (पानी)
Few saffron strands (केसर)
½ tsp cardamom powder
For frying & garnish (तलने और सजावट के लिए):
Ghee (घी) – for frying
Chopped dry fruits (बादाम, पिस्ता, काजू
Method (विधि)
1. Prepare sugar syrup (चाशनी बनाएँ):
Boil sugar and water together until it reaches sticky consistency.
Add saffron strands and cardamom powder. Keep warm.
2. Make batter (घोल तैयार करें):
In a bowl, mix singhara atta/rajgira atta, khoya, banana, coconut, and cardamom powder.
Slowly add milk and whisk to a smooth, flowing batter (like dosa batter).
Rest it for 10–15 minutes.
3. Fry malpua (मालपुआ तलें):
Heat ghee in a flat pan.
Pour a small ladle of batter to form a round malpua.
Fry on medium flame until golden and crisp edges form.
Drain excess ghee.
4. Dip in syrup (चाशनी में डालें):
Immediately dip hot malpua in warm sugar syrup for 1–2 minutes.
Remove and place on plate.
5. Garnish & Serve (सजाएँ और परोसें):
Garnish with chopped nuts and saffron strands.
Offer as Durga Maa prashad or serve warm.
