My first mutton dum biryani didn't turn out great... here's why👇🏻
1 The mutton cut matters - always go for shoulder meat!
2 Marinate for at least 3-4 hrs (overnight is 100)
3 Use a tenderizer like raw papaya paste
4 Soak basmati rice for 1 hour - not more
5 Seal the handi properly for perfect dum
